  • 1/2 head torn lettuce
  • 1 large bell pepper, chopped
  • 1 large tomato, chopped
  • 1 red onion, chopped
  • 1 can Ranch beans, drained and rinsed
  • taco meat or chicken (if desired)
  • crushed tortilla chips
  • Honey Dijon dressing
  • shredded Cheddar cheese

Instructions

  1. Combine torn lettuce, chopped bell pepper, chopped tomato, chopped red onion, drained and rinsed Ranch beans, crushed tortilla chips, shredded Cheddar cheese, and taco meat or chicken if desired in a large bowl.
  2. If made ahead of time, save the tomato and chips until just before serving.
  3. Toss in Honey Dijon dressing right before serving to keep the chips crunchy.

Tips & Substitutions

For added flavor, consider using black beans or pinto beans instead of Ranch beans. You can also add avocado or corn for extra texture and taste. If you prefer a spicier kick, include jalapeños or a dash of hot sauce. To keep the salad fresh if making ahead, store the dressing separately until serving. This Confetti Taco Salad pairs beautifully with Sarah's Seven Layer Dip.

Serving Suggestions

Serve this colorful salad as a main dish or as a side to grilled meats. It also complements Mexican recipes beautifully. For an extra layer of flavor, consider serving it with a side of Quick Veggie Chili Con Queso. Garnish with extra cheese or cilantro for a fresh touch.

Storage & Reheating

To store leftovers, place the salad in an airtight container, keeping the dressing and crushed tortilla chips separate to maintain crunchiness. The salad can be refrigerated for up to 2 days. When ready to eat, add the dressing and chips just before serving for the best texture and flavor.

Frequently Asked Questions

Can I make this salad vegetarian?

Absolutely! Simply omit the taco meat or chicken and load up on additional beans or veggies like corn and avocado for protein and flavor. This makes it a great option for anyone looking for vegetarian recipes that are hearty and satisfying.

What type of dressing works best?

While Honey Dijon dressing is a great choice for this salad, you can substitute it with ranch, salsa, or a simple vinaigrette if you prefer. Each will offer a unique flavor profile that complements the fresh ingredients.

How do I prevent the chips from becoming soggy?

To keep the chips crunchy, add them just before serving. If making ahead, store them in a separate container and mix them in at the last minute. This will ensure they stay crispy and provide that delightful crunch with each bite.
