Ingredients

  • 1 Tbsp vegetable oil
  • 1 lb zucchini
  • 1 to 2 garlic cloves
  • 1 (2 oz) jar chopped pimientos
  • 1 (15 1/2 oz) can whole kernel corn
  • 1 tsp salt
  • 1/4 tsp lemon-pepper seasoning
  • 1/2 cup shredded Mozzarella cheese

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Saute the zucchini and minced garlic for 3 to 4 minutes.
  3. Add the drained chopped pimientos and whole kernel corn to the skillet.
  4. Season with salt (if desired) and lemon-pepper seasoning.
  5. Cook and stir for an additional 2 to 3 minutes or until the zucchini is tender.
  6. Sprinkle with shredded mozzarella cheese and heat until the cheese is melted.
