Ingredients

  • 1 small or medium head cabbage
  • 1/2 cup green bell peppers
  • 1/2 cup grated carrots
  • 1 tablespoon salt
  • 1 cup sugar
  • 1/2 cup vinegar
  • 1/2 cup water
  • 1 teaspoon prepared mustard
  • 2 cups celery

Instructions

  1. Chop or shred enough cabbage to measure 1 quart.
  2. Add chopped cabbage, green bell peppers, grated carrots, and 1 tablespoon salt to a bowl.
  3. Let the mixture soak for 1 hour, then drain thoroughly.
  4. Combine sugar, vinegar, 1/2 cup water, and prepared mustard in a saucepan.
  5. Bring the mixture to a boil, then let it cool.
  6. Add the chopped celery to the cooled mixture.
  7. Pour the dressing over the drained cabbage mixture.
  8. Transfer the slaw into jars and keep refrigerated.
