Coq de la Paroise features tender chicken infused with rum, honey, and brandy, enhanced by creamy sour cream and crunchy almonds, perfect for elegant dinners or special occasions.

Ingredients

  • 3 lb. fryer chicken, cut and skinned
  • rum
  • honey
  • butter
  • 1 c. brandy
  • 1 c. white wine
  • 1 bay leaf, crushed
  • 1 c. sour cream

Instructions

  1. Dip each piece of chicken in rum, carefully rubbing each side in liquor.
  2. Coat each piece in light honey.
  3. Dredge lightly in flour.
  4. Brown in butter.
  5. Place chicken in a buttered baking dish.
  6. Add brandy, white wine, and crushed bay leaf to the dish.
  7. Cook chicken until tender at 350°F.
  8. Add sour cream and season to taste.
  9. Heat through and serve.
  10. Sprinkle top with chopped almonds just before serving.
