Spinach Timbale

Ingredients

  • 1/2 cup whole wheat bread crumbs
  • 2 pounds fresh spinach
  • 1 tablespoon butter or safflower oil
  • 1/2 onion, chopped fine
  • 1 clove garlic, minced
  • 3/4 cup grated Gruyere cheese
  • 1/2 cup grated Parmesan cheese
  • Sea salt and pepper
  • 4 eggs, beaten
  • 1 cup milk
  • Pinch of nutmeg

Instructions

  1. Preheat oven to 325°F (160°C). Butter a souffle dish and dust with 1/4 of bread crumbs.
  2. Wash spinach and remove stems. Wilt in a dry frying pan.
  3. Rinse wilted spinach under cold water; squeeze dry in a towel and chop fine.
  4. In a skillet, melt butter or safflower oil over medium heat.
  5. Add chopped onion and cook until translucent.
  6. Add minced garlic and cook for another minute.
  7. Combine cooked spinach with sautéed onion and garlic.
  8. In a mixing bowl, beat eggs and mix with milk, grated Gruyere, Parmesan, sea salt, pepper, and a pinch of nutmeg.
  9. Add bread crumbs to the mixture and stir well.
  10. Fold in the spinach mixture.
  11. Pour the mixture into the prepared souffle dish.
  12. Bake in the preheated oven for about 40 minutes, or until puffed and golden.
  13. Serve warm.
