Coriander Potatoes are flavorful, crispy roasted potatoes infused with aromatic spices and fresh cilantro, perfect as a side dish for casual gatherings or weeknight dinners.

Ingredients

  • 10 small red potatoes
  • 1/4 cup olive oil
  • 4 cloves garlic
  • 1/2 tablespoon ground coriander
  • 1 tablespoon ground fennel seed
  • 1 tablespoon cumin
  • 1/4 cup coarsely chopped cilantro
  • salt
  • freshly ground pepper

Instructions

  1. Parboil the small red potatoes, then cool and quarter them.
  2. Heat olive oil in a large sauté pan over medium heat.
  3. Add the quartered potatoes and sauté until lightly golden.
  4. Add coarsely chopped garlic, ground coriander, ground fennel seed, and cumin to the pan.
  5. Cook for 3 to 4 minutes, stirring occasionally.
  6. Season with salt and freshly ground pepper to taste.
  7. Add chopped cilantro and toss to combine before serving.
