Ingredients

  • 4 carrots, sliced
  • 2 potatoes, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1/2 tsp basil
  • 1/2 tsp marjoram
  • 1/2 tsp rosemary
  • 1/2 tsp thyme
  • 1/2 tsp white pepper
  • 1/2 lb firm tofu (optional)
  • 2 cups cooked white beans
  • 2 cups vegetable broth
  • chopped scallions for garnish

Instructions

  1. Preheat oven to 350°F. Coat a large casserole dish with cooking spray.
  2. Add sliced carrots, potatoes, onion, and minced garlic to the casserole.
  3. Saute the vegetables for 5 minutes.
  4. Add herbs (basil, marjoram, rosemary, thyme), tofu (if using), salt (if desired), and cooked white beans.
  5. Pour in enough vegetable broth or water to cover the ingredients, about 2 cups.
  6. Cover the casserole and bake for 45 minutes.
  7. Garnish with chopped scallions before serving.
