A cheesy corn and onion pie with a tender muffin crust, perfect as a comforting side or appetizer, blending sweet corn, savory onion, and melted cheddar flavors.

Ingredients

  • 1 tsp dill weed
  • 1 large onion, minced
  • 1/2 cup butter
  • 1 1/2 cups corn muffin mix
  • 1 cup cream-style corn
  • 1 cup sour cream
  • 1 1/2 cups grated Cheddar cheese
  • 1 egg, beaten
  • 1/3 cup milk
  • 1/2 tsp salt

Instructions

  1. Saute onion in butter until soft.
  2. Add sour cream to the onion mixture and set aside.
  3. Combine dill weed, muffin mix, beaten egg, milk, and salt to make the batter.
  4. Pour the batter into a greased and floured 9x9-inch pan.
  5. Sprinkle 3/4 cup grated Cheddar cheese on top of the batter.
  6. Add the onion and sour cream mixture over the cheese layer.
  7. Top with the remaining grated cheese.
  8. Bake for 35 minutes at 425°F.
  9. Cool slightly and cut into 9 squares.
