Ingredients

  • 1 lb sausage
  • 1 large onion, chopped
  • 3 large potatoes, cubed
  • 2 tsp salt
  • 1 tsp basil
  • 1/2 tsp pepper
  • 2 c water
  • 16.5 oz can cream-style corn
  • 16.5 oz can whole kernel corn (undrained)
  • 12 oz can evaporated milk

Instructions

  1. Crumble the sausage in a skillet and brown it; drain off excess fat.
  2. Transfer the cooked sausage into a deep pan.
  3. Return 2 tablespoons of fat to the skillet and sauté the chopped onion until translucent.
  4. Add the sautéed onion and sausage to the deep pan.
  5. Stir in the cubed potatoes, salt, pepper, basil, and water.
  6. Cover the pan and simmer for 15 minutes until potatoes are tender.
  7. Stir in the cream-style corn, whole kernel corn with liquid, and evaporated milk.
  8. Cover and heat the mixture almost to boiling.
  9. Serve hot with French bread and a fresh salad.
