Ingredients

  • 6 ears fresh corn
  • 1 medium onion, chopped
  • 1 medium green pepper
  • 2 Tbsp. butter or margarine, melted
  • 5 medium tomatoes, sliced 1/2-inch thick
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 cup soft bread crumbs

Instructions

  1. Cut the corn from the cob; combine the corn, chopped onion, and green pepper. Saute in 2 tablespoons melted butter for 5 minutes.
  2. Spoon half of the corn mixture into a 2-quart casserole; top with half of the sliced tomatoes. Sprinkle with half of the salt and pepper.
  3. Repeat the layers with the remaining corn mixture, tomatoes, salt, and pepper.
  4. Combine the bread crumbs with 2 tablespoons melted butter; sprinkle evenly over the casserole.
  5. Bake at 375°F for 30 minutes.
