Ingredients

  • 1/2 cup cornmeal
  • 1/4 cup flour
  • 1 teaspoon baking powder
  • 3/4 cup milk
  • 1 large or 2 small eggs
  • pinch of sugar
  • pinch of salt
  • 2 tablespoons shortening

Instructions

  1. Mix dry ingredients well: cornmeal, flour, baking powder, sugar, and salt.
  2. Add milk and egg(s) to the dry mixture and blend well.
  3. Add melted shortening and mix until combined.
  4. Pour batter into a greased pan or skillet.
  5. Bake at 350°F (175°C) until golden brown and cooked through, about 15 minutes.
  6. Let rise on the bottom rack, then move to the top rack to brown before serving.
