Hockenberry Casserole

Instructions
- Dice the small onion and cook with ground meat until all the meat is browned. Remove excess grease.
- Thinly slice the large potato and layer it in the bottom of a casserole dish.
- Add the cooked meat and onion mixture on top of the sliced potatoes.
- Sprinkle the uncooked rice evenly over the mixture.
- Add the large can of chopped tomatoes over the rice.
- Top with slices of American cheese and sprinkle with bread crumbs.
- Bake until the potatoes are tender and the top is golden.
