Ingredients

  • 2 Tbsp margarine
  • 2 Tbsp flour
  • 1 tsp dry mustard
  • 2/3 c milk
  • 1 1/2 c shredded sharp Cheddar cheese
  • 4 c cubed cooked potatoes
  • 1/4 c green onion slices
  • 1 1/2 c chopped ham

Instructions

  1. Melt margarine in a saucepan over low heat.
  2. Blend in flour and dry mustard.
  3. Gradually add milk, stirring constantly.
  4. Cook until thickened.
  5. Add 1 cup cheese; stir until melted.
  6. Stir in cooked potatoes, chopped ham, and green onion slices.
  7. Spoon mixture into a 1 1/2-quart casserole.
  8. Bake at 350°F for 30 minutes.
  9. Top with remaining cheese and continue baking until cheese melts.
