Ingredients

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 3 teaspoons baking powder
  • 2 tablespoons sugar

  • 2 egg whites
  • 1 1/4 cups skim milk
  • 1/2 cup applesauce

Instructions

  1. Preheat oven to 450°F.
  2. Lightly oil muffin pans.

  4. Place egg whites in a 2-cup measure.
  5. Add milk to measure 1 1/4 cups.
  6. Beat with a fork until well mixed.
