Ingredients

  • 1 c. corn meal
  • 1/4 tsp. baking soda
  • 1 c. whole wheat flour
  • 1 tsp. baking powder
  • 1 1/2 c. buttermilk
  • 2 Tbsp. honey
  • 2 eggs
  • 1/4 c. oil
  • 1 tsp. salt

Instructions

  1. Measure flour and sift baking soda, salt, and baking powder. Mix with corn meal.
  2. Combine oil, honey, and eggs.
  3. Add buttermilk, mixing well, and combine with dry ingredients.
  4. Beat only until smooth.
  5. Fill a well oiled 8 x 8-inch shallow pan halfway full.
  6. Bake at 350°F for 30 minutes or until done.
