Ingredients

  • 2 (10 oz.) packages frozen cut corn, defrosted
  • 1 large onion, sliced
  • 1 green pepper, chopped
  • 1 lb. ground beef
  • 3 Tbsp. fat
  • 2 cups canned tomatoes
  • 1 1/2 tsp. salt
  • 1/8 tsp. paprika
  • 1/8 tsp. cayenne pepper
  • 1 bay leaf
  • 1 tsp. chili powder

Instructions

  1. Remove frozen corn from freezer to defrost while preparing other ingredients.
  2. Brown onion, green pepper, and ground beef in hot fat in a heavy skillet.
  3. Add canned tomatoes and seasonings, then bring to a boil.
  4. Add frozen corn and mix well until kernels are well separated.
  5. Cover and cook until corn is done, about 2 to 3 minutes.
  6. Remove bay leaf before serving.
  7. Add more chili powder if a hotter flavor is desired.
