Ingredients

  • 2 Tbsp. oleo
  • 1/2 cup chopped ham
  • 1 medium onion, coarsely chopped
  • 1 celery stalk, coarsely chopped
  • 1/2 tsp. dried thyme
  • 3 or 4 medium red potatoes, cut into cubes
  • 2 cups chicken broth
  • salt and pepper
  • 1 (16 oz.) can creamed corn
  • 2 cups skim milk
  • 3 Tbsp. oleo
  • 3 Tbsp. flour
  • chopped parsley

Instructions

  1. Melt oleo in a large pot.
  2. Add chopped ham, onion, and celery; sauté about 10 minutes until vegetables are tender.
  3. Add dried thyme and cubed red potatoes; cook, stirring frequently.
  4. Pour in chicken broth; bring to a boil.
  5. Lower heat and season with salt and pepper; simmer for about 15 minutes until potatoes are tender.
  6. Add creamed corn and skim milk; heat until simmering and flavors meld.
