Ingredients
- 2 Tbsp. oleo
- 1/2 cup chopped ham ⓘ
- 1 medium onion, coarsely chopped ⓘ
- 1 celery stalk, coarsely chopped
- 1/2 tsp. dried thyme ⓘ
- 3 or 4 medium red potatoes, cut into cubes ⓘ
- 2 cups chicken broth ⓘ
- salt and pepper ⓘ
- 1 (16 oz.) can creamed corn ⓘ
- 2 cups skim milk ⓘ
- 3 Tbsp. oleo ⓘ
- 3 Tbsp. flour ⓘ
- chopped parsley ⓘ
Instructions
- Melt oleo in a large pot.
- Add chopped ham, onion, and celery; sauté about 10 minutes until vegetables are tender.
- Add dried thyme and cubed red potatoes; cook, stirring frequently.
- Pour in chicken broth; bring to a boil.
- Lower heat and season with salt and pepper; simmer for about 15 minutes until potatoes are tender.
- Add creamed corn and skim milk; heat until simmering and flavors meld.
