Ingredients

  • 1 pkg. yellow corn (frozen)
  • 2 c. corn meal (self-rising)
  • 1/2 c. flour
  • 1 egg
  • 1 c. milk
  • 1/2 stick butter
  • 1 Tbsp. sugar

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Melt the butter and let it cool slightly.
  3. In a mixing bowl, combine the melted butter, frozen corn, sugar, self-rising cornmeal, egg, flour, and milk.
  4. Mix until well blended.
  5. Pour the batter into a well-oiled iron skillet or muffin tin.
  6. Bake for 20 minutes or until golden brown and a toothpick inserted in the center comes out clean.
