Ingredients

  • 2 c. flour
  • 3 tsp. baking powder
  • 1 tsp. granulated sugar
  • 1 tsp. salt
  • 1/4 tsp. paprika
  • 1/4 tsp. celery salt
  • 2 eggs
  • 1 1/2 c. cooked corn
  • 1/3 c. milk

Instructions

  1. Mix flour, baking powder, sugar, salt, paprika, and celery salt in a bowl.
  2. Add beaten eggs, cooked corn, and milk; stir and beat for 2 minutes to form batter.
  3. Pour batter from a spoon into a frying pan with melted fat, forming fritters.
  4. Cook until golden brown, then turn and cook the other side for 5 minutes.
  5. Drain fritters, sprinkle with sugar, and serve.
