Ingredients

  • 1/2 stick margarine
  • 1 Tbsp chopped onion
  • 3 Tbsp flour
  • 1 Tbsp prepared mustard
  • 1/2 tsp salt
  • 2 c milk
  • 1 lb franks, cut into pieces
  • 1 can or 1 pkg frozen peas
  • 1 (12 oz) pkg corn muffin mix

Instructions

  1. Melt the margarine in a skillet over medium heat.
  2. Add chopped onion and cook until lightly browned.
  3. Stir in flour, salt, and prepared mustard until well combined.
  4. Gradually add milk, stirring constantly to prevent lumps.
  5. Cook and stir until the mixture thickens.
  6. Add sliced franks and peas to the mixture and heat until boiling.
  7. Pour the hot mixture into a 13 x 9 x 2-inch baking dish.
  8. Bake or serve hot as desired.
