Ingredients

  • 1 1/2 cups cornmeal
  • 2 cups buttermilk
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 2 tablespoons bacon fat
  • 1 egg

Instructions

  1. Preheat oven to 450°F (232°C). Grease a pan with bacon fat if desired.
  2. In a mixing bowl, combine cornmeal, flour, salt, and soda.
  3. Add buttermilk and egg to the dry ingredients and mix until well combined.
  4. Pour batter into the prepared pan where bacon fat has been placed at the bottom.
  5. Bake for 20 to 30 minutes, until golden brown.
  6. During the last 2 or 3 minutes, turn on the broiler to brown the top of the cornbread.
