Ingredients

  • 1 cup thawed frozen corn
  • 1/2 cup evaporated milk
  • 1/3 cup nonfat dry milk powder
  • 3 tablespoons honey
  • 1/2 teaspoon cinnamon
  • 1/2 cup plus 2 tablespoons yellow cornmeal
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 1 egg
  • 1 tablespoon melted margarine

Instructions

  1. In a nonstick skillet, combine corn, evaporated milk, dry milk powder, 1 tablespoon honey, 1 teaspoon vanilla, and 1/4 teaspoon cinnamon.
  2. Cook over medium heat until the liquid is absorbed and the corn is brown and sticky, stirring constantly.
  3. Preheat the oven to 325°F and spray a 1-quart baking dish with cooking spray.
  4. In a mixing bowl, combine cornmeal, baking soda, and remaining cinnamon.
  5. Add buttermilk, beaten egg, melted margarine, remaining honey, and vanilla; mix well.
  6. Pour the cornmeal mixture into the prepared baking dish.
  7. Bake in the preheated oven for about 30-35 minutes, or until golden brown and set.
  8. Serve warm as a savory or slightly sweet side dish.
