  • 1 c. celery, sliced thin
  • 1/2 c. chopped onion
  • 6 eggs
  • 1 1/2 to 2 c. Coffee-mate
  • 1 (8 oz.) pkg. Monterey Jack cheese, shredded
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 c. broccoli, cut in small pieces

Instructions

  2. Saute onion and celery in margarine until tender.
  3. Lightly beat eggs and Coffee-mate together.
  4. Add the sautéed vegetables, shredded cheese, salt, and pepper to the egg mixture.
  5. Pour the mixture into pastry shells.
  6. Bake at 325°F (160°C) for approximately 1 1/2 hours until a knife inserted in the center comes out clean.
