Ingredients

  • 11 oz. can whole kernel corn, drained
  • 2 eggs, beaten
  • 2 Tbsp. chopped onion
  • 2 Tbsp. milk
  • 2 Tbsp. melted butter
  • 1/2 tsp. salt
  • 1/4 to 1/2 tsp. paprika

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine all ingredients in a bowl.
  3. Spoon the mixture into greased muffin cups.
  4. Set the muffin tin in a pan of water.
  5. Bake for 30 to 35 minutes until set.
  6. Loosen edges and turn out onto a serving platter.
