Ingredients

  • 1 can whole kernel corn
  • 1 can cream-style corn
  • 1 (8.5 oz.) box corn muffin mix
  • 1 stick margarine
  • 3 Tbsp. onion, chopped
  • 1/2 tsp. black pepper
  • 2 eggs, beaten
  • 1 c. sour cream
  • 1 c. shredded cheese

Instructions

  1. Mix the whole kernel corn, cream-style corn, corn muffin mix, chopped onion, black pepper, beaten eggs, and sour cream together in a bowl.
  2. Pour the mixture into a greased 8 x 12-inch baking pan.
  3. Spread sour cream evenly over the top of the mixture.
  4. Sprinkle shredded cheese over the sour cream layer.
  5. Bake in a preheated oven at 350°F (175°C) for 45 minutes until golden brown and bubbly.
  6. Serve hot and enjoy.
