Ingredients

  • 1 c. yellow cornbread
  • 1 c. unsifted all-purpose flour
  • 2 Tbsp. sugar
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 1 c. milk
  • 1/2 c. cooking oil
  • 1 can finely crushed French fried onions (3 oz.)
  • 2 Tbsp. Parmesan cheese

Instructions

  1. In a large mixing bowl, stir together yellow cornbread, all-purpose flour, sugar, baking powder, and salt.
  2. Add egg, milk, and cooking oil to the dry ingredients.
  3. Beat until smooth, about 1 minute.
  4. Place finely crushed French fried onions and Parmesan cheese in a well-greased 8-inch ring mold.
  5. Tilt the ring mold to coat all sides with the onion and cheese mixture, reserving any excess crumbs.
  6. Pour the batter into the ring mold and sprinkle with the reserved crumbs.
  7. Microwave on Medium-high (7) for 9 to 11 minutes, until a toothpick inserted in the center comes out clean.
  8. Turn out the cornbread on a cooling rack or serving plate.
  9. Serve warm.
