Ingredients

  • 6 potatoes, thinly sliced
  • 3 carrots, thinly sliced
  • 1 medium onion, chopped
  • 1 Tbsp butter
  • salt and pepper to taste
  • 1 can corned beef, minced
  • 1 can cream of mushroom soup
  • 1 (8 oz.) can tomato sauce
  • cabbage

Instructions

  1. Layer the sliced potatoes and carrots in a casserole dish.
  2. Season with salt and pepper to taste.
  3. Add a layer of minced corned beef over the vegetables.
  4. Top with chopped onion.
  5. Add a layer of cabbage and dot with butter.
  6. Mix the cream of mushroom soup and tomato sauce together.
  7. Pour the soup and sauce mixture over the layered vegetables.
  8. Bake in a 375°F oven for 1 hour and 30 minutes.
