Ingredients

  • 1 1/2 lb round steak
  • 1 cup flour
  • 2 tablespoons flour
  • 1/3 cup cornmeal
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs
  • 2 tablespoons water
  • 4 tablespoons vegetable oil
  • 1 1/4 cup beef broth

Instructions

  1. Place steaks on a wax paper lined surface and cover with a second sheet of wax paper.
  2. Pound steaks into 1/4 inch thick pieces and set aside.
  3. Line your work area with clean wax paper and make a 1/2 cup pile of flour, then a pile of cornmeal, and then another 1/2 cup pile of flour.
  4. To the last pile of flour, mix in the paprika, salt, and black pepper.
  5. In a shallow dish, beat together the eggs and water.
  6. Cut steaks into 4 pieces each.
  7. Coat each piece first in plain flour, then in the egg mixture, then in the seasoned flour, and finally in the cornmeal.
  8. In a heavy skillet, heat 2 tablespoons of vegetable oil. When hot, brown 2 pieces of steak at a time, adding more oil as needed.
  9. Once all pieces are browned, return all steak to the skillet, cover, and cook for 15 minutes.
  10. Remove steaks to a serving platter and pour off all but 3 tablespoons of the drippings.
  11. Add 2 tablespoons of flour to the drippings and cook for about 2 minutes.
  12. Whisk in the beef broth, season with salt and black pepper, then add the cream and whisk until smooth.
  13. When the gravy bubbles, remove from heat.
  14. Prepare biscuits according to your favorite recipe or package directions.
  15. Serve the steaks and warm biscuits topped with the creamed pan gravy.

Tips & Substitutions

For a crispier coating, ensure the oil is hot before adding the steak. You can substitute the round steak with a more tender cut like sirloin for a quicker cook time. If you prefer a gluten-free option, use almond flour instead of regular flour. Adding a dash of hot sauce to the egg mixture can enhance the flavor.

Serving Suggestions

Serve the chicken fried steak with warm biscuits and drench them in the creamed pan gravy. For a complete meal, pair with a side of sautéed green beans or a simple salad. This dish also goes well with Annette'S Meatballs for a hearty feast or try it alongside Baked Beans(In A Crock-Pot) for a comforting meal.

Storage & Reheating

Store any leftover chicken fried steak and creamed gravy in an airtight container in the refrigerator for up to 3 days. To reheat, place the steak in a preheated oven at 350°F until warmed through, and gently reheat the gravy on the stove to prevent curdling.

Frequently Asked Questions

Can I make this dish ahead of time?

Yes, you can prepare the chicken fried steak ahead of time by breading the steaks and storing them in the refrigerator for a few hours before frying. This allows the coating to adhere better during cooking.

What can I use instead of beef broth?

If you don't have beef broth on hand, chicken broth or vegetable broth can be used as a substitute. However, keep in mind that it may slightly alter the flavor of the gravy.

How do I know when the steak is cooked properly?

The steak should be golden brown and crispy on the outside. Use a meat thermometer to ensure it reaches an internal temperature of 145°F for medium-rare. Adjust cooking time based on your preferred doneness.
