  • 3 to 4 lb. beef brisket (corned)
  • 2 small bay leaves
  • 1 chopped onion
  • water to cover
  • 2 minced garlic cloves
  • 1/2 tsp. peppercorns (whole)

Instructions

  1. Put the corned beef into a pot and add water just to cover.
  2. Add the chopped onion, minced garlic cloves, bay leaves, and whole peppercorns.
  3. Cover the pot and cook on high for 1 hour.
  4. Lower the heat and continue cooking on low for 10 to 12 hours.
