Ingredients

  • 1 cup oatmeal
  • 1 cup sugar
  • 1 cup flour
  • 1 egg
  • 1/2 cup shortening
  • 1/2 cup chopped raisins
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon soda
  • 1/2 teaspoon vanilla
  • pinch of salt
  • crushed cornflakes

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix oatmeal, sugar, flour, chopped raisins, cinnamon, nutmeg, soda, vanilla, and a pinch of salt in a bowl.
  3. Add egg and shortening to the mixture and stir until well combined.
  4. Form the dough into small balls.
  5. Roll each ball in crushed cornflakes until fully coated.
  6. Place the coated dough balls on a baking sheet lined with parchment paper.
  7. Bake for 10 to 12 minutes until golden brown.
  8. Remove from oven and let cool before serving.
