Ingredients

  • 2 (1 lb.) game hens
  • 2 Tbsp. slivered almonds
  • 3 Tbsp. butter
  • 1/3 cup uncooked long grain rice
  • 1 chicken bouillon cube
  • 1 tsp. lemon juice
  • salt and pepper to taste
  • 2 Tbsp. finely chopped onion
  • 1/2 tsp. salt
  • 1 cup water

Instructions

  1. Season the game hens inside and out with salt and pepper.
  2. In a small saucepan, cook slivered almonds, uncooked long grain rice, and chopped onion in butter for 5 to 10 minutes, stirring frequently.
  3. Add water, chicken bouillon cube, lemon juice, and salt to the saucepan.
  4. Bring the mixture to a boil, stirring to dissolve the bouillon cube.
  5. Reduce heat, cover, and simmer for about 20 to 25 minutes or until the liquid is absorbed and rice is fluffy.
  6. Stir in drained mushrooms.
  7. Lightly stuff the hens with the rice mixture.
  8. Place the hens, breast side up, on a rack in a shallow baking pan.
  9. Brush the hens with melted butter.
  10. Roast, covered, at 400°F for 30 minutes.
  11. Uncover and roast for an additional hour, basting with butter during the last 15 minutes.
