Ingredients

  • 1 Cornish hen per person
  • 1 can cream of chicken soup
  • 1 stick celery
  • 1 onion
  • salt and pepper
  • dab of butter

Instructions

  1. Preheat oven to 500°F to sear the juices.
  2. Lay the Cornish hens in a pan.
  3. Salt and pepper each hen, rubbing in well.
  4. While the oven heats, sauté chopped onions and celery in a dab of butter on the stovetop until tender.
  5. Put the can of cream of chicken soup and one can of water in a saucepan and heat until creamy.
  6. Once the oven reaches 500°F, put the hens in and roast for 30 minutes or until crispy and golden brown.
  7. After roasting, pour the creamy mixture over the hens.
  8. Cook for an additional 20 minutes or until the hens are thoroughly cooked.
  9. Serve hot over rice.
