Ingredients

  • 2 Cornish hens, halved
  • salt and pepper
  • 1 onion, chopped fine
  • 1/2 cup melted butter or margarine
  • 1 (10 3/4 oz.) can chicken broth
  • 1 tablespoon cornstarch
  • 1 (4 oz.) can celery or mushroom soup (undiluted)
  • 1 cup sour cream

Instructions

  1. Salt and pepper the halved Cornish hens.
  2. Brown the hens with chopped onion and melted butter in a skillet for 10 minutes.
  3. Add chicken broth and simmer the hens for 30 minutes.
  4. Remove the hens from the skillet.
  5. Add cornstarch to the drippings in the skillet and stir constantly until smooth.
  6. Blend in undiluted mushroom or celery soup and sour cream into the sauce.
  7. Place the hens in a baking dish.
  8. Pour the sauce over the hens.
  9. Bake at 350°F (175°C) for 15 minutes before serving.
