Ingredients

  • 2 Cornish hens
  • 1 small onion, chopped
  • 1 apple, peeled, cored, and chopped
  • 4 slices bread, cubed
  • 2 teaspoons margarine or butter, melted
  • 1/2 teaspoon dried sage leaves
  • 1/2 teaspoon dried thyme
  • 1/8 teaspoon ground pepper
  • 1 rib celery, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Rinse the Cornish hens and open each cavity for the stuffing.
  3. Combine chopped onion, apple, bread cubes, melted margarine or butter, dried sage leaves, dried thyme, ground pepper, and chopped celery in a bowl.
  4. Toss to mix well.
  5. Fill each hen cavity with the stuffing mixture.
  6. Place hens breast side up in a shallow roasting pan.
  7. Roast for 40 to 50 minutes or until tender.
