Ingredients

  • white sugar
  • brown sugar
  • pumpkin pie spice
  • eggs
  • pumpkin
  • evaporated milk
  • pie shell
  • Pam (cooking spray)

Instructions

  1. Mix white sugar, brown sugar, and pumpkin pie spice in a small bowl.
  2. Beat eggs in a large bowl.
  3. Stir in pumpkin and the sugar and spice mixture.
  4. Gradually stir in evaporated milk.
  5. Pour the mixture into a pie shell that has been sprayed with Pam and coated with cornmeal on the bottom and sides.
  6. Bake in a preheated oven at 425°F for 15 minutes.
  7. Reduce oven temperature to 350°F.
  8. Bake for an additional 40 to 50 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool the pie for 2 hours before serving.
