Ingredients

  • 1 cup buttermilk
  • 1 egg
  • 1/4 cup yellow cornmeal
  • 1/2 cup flour

Instructions

  1. Combine buttermilk, egg, and melted butter in a mixing bowl.
  2. Stir briskly until the mixture is smooth.
  3. In a smaller bowl, stir together cornmeal, flour, salt, and baking soda until well blended.
  4. Add the dry ingredients to the wet mixture and stir only until moistened, leaving some lumps.
  5. Heat a griddle or skillet to medium hot.
  6. Lightly grease the surface and spoon about 3 tablespoons of batter for each pancake, spreading it with the back of a spoon.
