Ingredients

  • 1 lb sausage
  • 1 large onion
  • 2 eggs
  • 1/2 cup cornmeal
  • 1 can cream-style corn
  • 3/4 cup milk
  • 1/4 cup oil
  • 2 cups grated Cheddar cheese

Instructions

  1. Preheat oven to 425°F.
  2. Grease a 10 1/2-inch skillet or 2-quart baking dish.
  3. Set aside.
  4. Brown the sausage and chopped onion in a skillet.
  5. Drain well and set aside.
  6. In a bowl, combine the beaten eggs, cornmeal, cream-style corn, milk, and oil.
  7. Pour half of the meat mixture into the prepared dish.
  8. Sprinkle with grated Cheddar cheese.
  9. Pour the remaining batter over the cheese layer.
  10. Bake for 30 to 40 minutes until golden and set.
  11. Let cool for 10 minutes before serving.
