Ingredients

  • 2 cups cottage cheese (small curd dry), drained
  • 4 eggs
  • 1/2 cup flour
  • 3/4 stick real butter, melted
  • pinch of salt

Instructions

  1. Beat the eggs lightly in a bowl.
  2. Add the melted butter to the eggs and mix well.
  3. Stir in the flour and a pinch of salt until just combined.
  4. Heat a pancake griddle to 375°F.
  5. Pour 1/4 or 1/2 cup of batter onto the griddle for each pancake.
  6. Cook until the edges brown slightly, then flip and cook the other side until golden.
  7. Serve warm with syrup.
