Ingredients

  • 10 medium potatoes
  • 1 green pepper
  • 1 large onion
  • 1 slice bread
  • 1/2 lb Velveeta cheese
  • 1/2 lb butter or margarine
  • 1 Tbsp parsley flakes
  • salt and pepper to taste
  • crushed corn flakes

Instructions

  1. Cook, cool, peel, and dice the potatoes.
  2. Dice the green pepper and onion.
  3. Make bread into crumbs.
  4. Melt the Velveeta cheese and butter together.
  5. Mix the diced potatoes, green pepper, onion, bread crumbs, melted cheese, parsley flakes, salt, and pepper together.
  6. Place the mixture in a greased casserole dish.
  7. Top with crushed corn flakes.
  8. Bake at 350°F for one hour.
