Ingredients

  • 6 Tbsp. soft butter
  • 1 cup sugar
  • 2 beaten eggs
  • 1/2 cup milk
  • 1 1/4 cups flour
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • grated zest of 1 lemon
  • 1/4 cup confectioners' sugar
  • few drops of lemon juice

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Add beaten eggs and mix well.
  3. Sift together flour, salt, and baking powder.
  4. Add dry ingredients alternately with milk to the creamed mixture, mixing after each addition.
  5. Pour batter into a greased loaf pan.
  6. Bake at 350°F for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Mix confectioners' sugar with a few drops of lemon juice to make glaze.
  8. Drizzle the glaze over the cooled lemon loaf before serving.
