Couscous Bake
Ingredients
- 1 1/2 cups water ⓘ
- 1/4 teaspoon garlic salt ⓘ
- 1 cup couscous, uncooked ⓘ
- 1 (15 ounce) can black beans, drained ⓘ
- 1 cup frozen whole kernel corn, thawed ⓘ
- 1 (8 ounce) can sliced water chestnuts, drained
- 1 (7 ounce) jar roasted red peppers, drained and cut into strips
- 1 (8 ounce) carton sour cream ⓘ
- 2 tablespoons red wine vinegar ⓘ
- 1 teaspoon cumin ⓘ
- 1/4 teaspoon salt ⓘ
- 5 green onions, sliced ⓘ
- 1 (10 ounce) package fresh spinach ⓘ
Instructions
- Combine water and garlic salt in a large saucepan; bring to a boil.
- Remove from heat, and stir in couscous.
- Cover and let stand 5 minutes or until liquid is absorbed.
- Stir in black beans and next 7 ingredients.
- Spoon into a lightly greased 11 x 7 inch baking dish.
- Bake at 350°F for 25 minutes, or until heated through.
- Sprinkle with sliced green onions.
- Cut spinach into thin strips and serve couscous misture over spinach.
