Ingredients

  • 2 cups water
  • 1 1/2 teaspoons salt
  • 2 cups couscous
  • 1 small red onion, diced
  • 2 small cucumbers, seeded and diced
  • 3/4 cup currants, drained or raisins
  • 1/2 cup chopped flat leaf parsley

Instructions

  1. Bring water to a boil.
  2. Stir in salt and add couscous.
  3. Remove pan from heat and cover.
  4. Let stand for 5 minutes.
  5. Transfer couscous to a large bowl and break up any clumps.
  6. Toss couscous with diced red onion, diced cucumbers, drained currants or raisins, and chopped parsley.
  7. Add couscous dressing and mix well.
