Ingredients

  • 2 cups cornmeal mix
  • 1 egg
  • 1 1/3 cups milk
  • 1/4 cup oil
  • 4 jalapeno peppers, sliced
  • 1 large onion, chopped
  • 1/2 cup grated Cheddar cheese

Instructions

  1. Preheat oven to 350°F.
  2. Put oil in a cast-iron skillet and heat it.
  3. In a bowl, combine cornmeal mix, egg, milk, and oil; blend well.
  4. Pour half of the batter into the skillet.
  5. Add sliced jalapenos, chopped onion, and grated Cheddar cheese on top.
  6. Pour the remaining batter over the ingredients in the skillet.
  7. Bake for 25 minutes until golden and cooked through.
