  • 1 can peas
  • 1/2 cup onion
  • 1 clove garlic
  • 1 Tbsp. oil

Instructions

  1. Put water to boil with some salt.
  2. When boiling, put in the tongue and cook for 45 minutes to 1 hour.
  3. Take it out and peel off the skin and chop meat into small pieces.
  4. In a skillet, add oil, onion, garlic, and tomato.
  5. Saute for 5 minutes, then add the meat and peas on top of the sauce.
  6. Let cook for 5 to 10 minutes just to make sure the meat is done.

Tips & Substitutions

When boiling the tongue, adding spices like bay leaves or peppercorns can enhance the flavor. If you prefer a different texture, consider using a pressure cooker to reduce cooking time. For a lighter dish, substitute the peas with fresh spinach or kale. Also, ensure to remove all the skin thoroughly for a better mouthfeel.

Serving Suggestions

Serve the cow's tongue with a side of mashed potatoes or rice for a hearty meal. It pairs beautifully with Cranberry Pecan Conserve for a touch of sweetness. You can also garnish with fresh herbs like parsley or cilantro for added flavor. Consider serving it alongside a crisp salad for a refreshing contrast.

Storage & Reheating

Leftover cow's tongue can be stored in an airtight container in the refrigerator for up to three days. To reheat, gently warm it in a skillet over low heat to prevent drying out. Alternatively, you can add a splash of broth or water to keep it moist while reheating.

Frequently Asked Questions

How do I know when the tongue is fully cooked?

The tongue should be tender and easily pierced with a fork when fully cooked. Cooking for 45 minutes to 1 hour is usually sufficient, but you can check for doneness by ensuring it reaches an internal temperature of at least 160°F.

Can I use a different cut of meat instead of tongue?

Yes, you can substitute tongue with other cuts like brisket or chuck roast. However, cooking times may vary, so adjust accordingly. Keep in mind that tongue has a unique texture and flavor that may not be replicated with other meats.

What are some good sides to serve with cow's tongue?

Good sides include roasted vegetables, a green salad, or even traditional Pudding And Jello Salad for a nostalgic touch. For a more filling option, consider serving it with a side of Catonsville United Methodist Potato Salad to complement the dish.
