Ingredients

  • 1 cup crabmeat
  • 1 tablespoon butter
  • 2 tablespoons flour
  • 2 tablespoons grated Parmesan cheese
  • 3/4 cup light cream
  • 1 egg yolk
  • 2 tablespoons dry sherry
  • 1/2 teaspoon salt
  • pepper
  • 36 canape shells

Instructions

  1. Melt butter in a saucepan over low heat.
  2. Add flour and stir until smooth.
  3. Add Parmesan cheese and light cream, cook until thickened, stirring constantly.
  4. Remove from heat and stir in crabmeat, salt, and pepper.
  5. Beat egg yolk lightly with dry sherry and add to the crab mixture.
  6. Chill the mixture until serving time.
  7. Just before serving, spoon the crab mixture into canape shells.
  8. Place filled canapes on a cookie sheet and bake at 350°F for 5 to 10 minutes until the top is bubbly.
