Ingredients

  • 2 cups cooked crab meat
  • 3 tablespoons butter
  • 5 tablespoons flour
  • 1 1/2 cups milk
  • salt and pepper to taste
  • 1 egg, beaten
  • dash of celery salt
  • 1 teaspoon grated onion
  • mayonnaise
  • dry bread crumbs

Instructions

  1. Melt butter in a saucepan; blend in flour and add milk.
  2. Cook, stirring constantly, until thickened.
  3. Add salt, pepper, beaten egg, celery salt, and grated onion; cook until thick.
  4. Remove spines from crab meat and add to the mixture.
  5. Chill the mixture for several hours.
  6. Form into cakes or cut into small steak-shaped pieces; dip into flour, then spread mayonnaise generously on both sides and roll in crumbs.
  7. Brown in hot butter until golden brown.
  8. Serve with creamed peas, cheese sauce, and lemon wedges.
