Ingredients

  • 1 stick butter
  • 1 cup beer
  • 1 cup flour
  • salt
  • 4 eggs
  • 1 pound crab
  • 1 tablespoon turmeric
  • 1 tablespoon parsley flakes
  • 1 tablespoon chopped onion
  • 2 tablespoons lime or lemon juice

Instructions

  1. In a saucepan, melt the butter and add the beer; bring to a boil.
  2. Add the flour and mix thoroughly until the mixture comes away from the pan.
  3. Remove from heat, then add eggs one at a time, mixing well after each addition.
  4. Drop spoonfuls of the batter onto a cookie sheet.
  5. Bake at 450°F for 10 minutes, then lower the temperature to 350°F and bake for an additional 10 to 15 minutes until golden.
  6. Meanwhile, combine crab, turmeric, parsley flakes, chopped onion, and lime or lemon juice in a bowl.
  7. Once the puffs are baked, serve hot with the crab mixture as a filling or topping.
