Ingredients

  • 1/2 cup butter
  • 1 small onion, chopped
  • 1/2 cup parsley, chopped fine
  • 2 tablespoons flour
  • 1 pint half and half
  • 1 pound Swiss cheese, grated
  • 1 tablespoon sherry (optional)
  • pepper and salt to taste

Instructions

  1. Melt butter in a heavy pot and sauté onions and parsley.
  2. Blend in flour, half and half, and grated Swiss cheese until the cheese is melted.
  3. Add remaining ingredients and gently fold in crabmeat.
  4. Serve in a chafing dish with Melba toast, in patty shells, or warm with crackers.
