Crabmeat stuffing combines tender crab, aromatic herbs, and seasoned bread crumbs, making it an elegant side dish perfect for seafood lovers and special occasions.

Ingredients

  • 1 lb. crabmeat
  • 1 medium onion
  • 3 stalks celery
  • 4 oz. butter or margarine
  • 1/2 tsp. thyme leaf
  • 1 Tbsp. chopped basil
  • 1/2 c. white wine
  • 2 Tbsp. lemon juice
  • 2 bay leaves
  • 1/4 c. chopped fresh parsley
  • 8 oz. fresh bread crumbs

Instructions

  1. Pick through crabmeat to remove shells.
  2. In a small saucepan, add butter, diced onion, diced celery, thyme leaf, crabmeat, white wine, lemon juice, chopped basil, and bay leaves.
  3. Heat on low for 10 to 15 minutes, stirring occasionally.
  4. When vegetables are tender, transfer the mixture to a food processor. Remove and discard bay leaves.
  5. Puree the mixture for 60 seconds, then add in bread crumbs and mix well.
  6. Stir in chopped fresh parsley.
  7. If the mixture is still wet, add more breadcrumbs until desired consistency is reached.
