Ingredients

  • 2 to 3 chicken breasts
  • 2 cans cream of chicken soup
  • 1 can cream of mushroom soup
  • 8 oz. sour cream
  • 3 packs Ritz crackers
  • salt

Instructions

  1. Boil chicken for about 30 to 40 minutes on medium heat. After the chicken is done, cut into small pieces and place in a large casserole dish.
  2. In a saucepan, combine the cream of chicken soup, cream of mushroom soup, 1 cup of chicken broth, sour cream, salt, and pepper. Cook on low heat, stirring to prevent sticking and burning, until the sauce is warm.
  3. Pour the sauce over the cooked chicken and gently stir to mix well.
  4. Crush the Ritz crackers and evenly cover the top of the casserole.
  5. Drizzle a generous amount of melted butter over the crushed crackers.
  6. Bake in the oven at 350°F (175°C) until the crackers start browning, about 15 to 25 minutes. Keep an eye to prevent burning.
